Lamb Skewers (Yang Rou Chuar)
This dish is a street food from China. I have many great memories of eating them by the dozens with friends late at night in Beijing!
Ingredients:
1 lb of lamb meat
1/2 medium onion
2 tablespoons of cumin seeds
Marinade:
2 T oil
2 T soy sauce
2 tsp cumin powder
1 tsp Ancho chili powder
1 tsp salt
Tools:
Bamboo skewers (which have been soaked in water for one hour) or metal skewers.
Knife
Cutting board
One-gallon sized zip lock style plastic bag
Propane or charcoal grill
Instructions:
1. Cube the lamb and chop the onion into pieces that are big enough to fit onto a skewer.
2. Place all of the ingredients including the lamb and onion into a one-gallon zip type plastic bag.
3. Marinate for at least one-half hour or more at room temperature in the gallon bag (or overnight in the refrigerator).
4. Alternate placing pieces of onion and meat on bamboo or metal skewers.
5. Preheat your grill to 450 to 500 degrees (or light the charcoal and wait until a nice bed of coals has developed).
6. Grill the meat (flipping occasionally) until the meat is well cooked and the onion is tender.
7. Serve immediately and Enjoy your heart out!
