Escalloped potatoes
I recently re-discovered this recipe from my mother. It is easy to make and deliciously creamy.
Ingredients:
6 potatoes peeled and thinly sliced
1 1/2 cups of milk
1/2 stick of butter
2 T corn starch dissolved in 1/2 cup of water
1 cup of shredded cheese
Salt and pepper to taste
DIrections:
Boil the sliced potatoes in a pan of liberally salted water until almost tender. Combine the milk, butter, corn starch and cheese in a saucepan. (Stir the sauce almost continually as it will burn easily.)
Cover the potatoes with the sauce and bake for 30-40 minutes in a 350 degree oven. Then enjoy, enjoy, enjoy!
