Chinese Tomato Egg

This is a simple but delicious meal that is frequently made in Chinese homes. I learned to make it in Beijing many years ago. Adding a little sugar to the savory tomatoes enhances the flavor of the tomatoes wonderfully!

6 Extra Large Eggs

½ tsp Kosher Salt

½ tsp Sesame oil

¼ tsp pepper

3 TBSP cooking oil

½ Pound of ripe tomatoes sliced

1 tsp sugar

 

Combine eggs, ¼ tsp of the salt, sesame oil, and pepper in a bowl and mix well.

Heat ½ of the oil in a hot wok until shimmering.

Add the egg mixture and cook, stirring occasionally until set. Them remove and set aside.

Heat the remainder of the oil in the wok until shimmering and add the sliced tomatoes, remaining salt and sugar. Heat until cooked.

Add the cooked eggs into the tomato mixture and stir until well combined. Serve hot!
