Mango Cake

This is my oldest daughter’s favorite dessert. A very delicious and easy treat for holidays and special occasions.

Ingredients

3 cans of diced or sliced mangos (or 5-6 large fresh mangos)

2 boxes of short bread or similar cookies (about 60 cookies)

2 cups of canned mango juice

24 ounces of cream cheese

2 cups of heavy cream

3 cups of powdered sugar

Instructions

  1. Drain the canned mangos or (peel and slice if using fresh mangos).
  2. Mix together the cream cheese, cream and powdered sugar on medium with an electric mixer until smooth.
  3. Dip 1/3 of the cookies in mango juice and arrange in a single layer in a 9 x 13 glass baking dish.
  4. Add a layer of the cream cheese mixture on top of the layer of cookies.
  5. Add a layer of mango (about 1/3 of the mangos).
  6. Repeat the above three steps twice to make three layers of cookies, cream cheese and mango.
  7. Cool for one hour before serving.
