Smoked Tomato Sauce is SO Delicous!

  1. Put whole tomatoes in the smoker at 225 degrees for 3-4 hours.
  2. Run the tomatoes through a sieve (I have a kitchen aid fruit and vegetable strainer attachment) which processes 30 pounds of tomatoes in less than an hour.
  3. boil the sauce until it is your desire consistency
  4. sterilize jars and lids.
  5. Add one tablespoon of citric acid or lemon juice per quart of sauce.
  6. Boil the jars of tomato sauce in a water bath for 20 minutes.
  7. BE VERY CAUTIOUS as you remove them from the water bath.
  8. Check to be sure a vacuum seal has been achieved once cooled.
